RESOLUTION
WHEREAS, over the past thirty years, The Chicago Diner has provided extraordinary eating in (he Chicagoland area with a concept of meat free dining; and,
WHEREAS, Alderman Thomas Tunney has learned of this anniversary milestone; and,
WHEREAS, Chicago may have been the "hog butcher to the world," but that did not deter a panel'optimistic vegetarians from opening a meat-free restaurant in 1983; and,
WHEREAS, Michael Hornick and his partner Jo Kaucher, opened their restaurant The Chicago Diner, in 1983 to much fanfare; and,
WHEREAS, opening their first restaurant at 3411 North Halsted in the Lakeview community, and then their second in 2012, in the Logan Square neighborhood at 2333 North Milwaukee; Michael & Jo continually elevates vegetarian cuisine from its humble beginnings to a delicious, artful experience; and,
WHEREAS, creating an atmosphere of Americana, with vintage ads and neon lights and serving up heaping helpings of comfort food, The Chicago Diner has served thousands of happy vegetarians, and those who are vegetarians for the day; and,
WHEREAS, over the years, The Chicago Diner has drawn regular folks and celebrities to their classic, home-style recipes using plant based protein, natural ingredients and in season organic produce; and,
WHEREAS, as creators of The Chicago Diner Cookbook, they offer tips and techniques for preparing some of Chicago Diner's most popular dishes from Shepherd's Pic, Stioganoff and Moussaka to hundreds of pages of delicious healthy vegetarian delights; and,
WHEREAS, Jo was a member of the only vegan team of all-star chefs to participate in the International Culinary Olympics in 1984, where she won two silver medals; and,
WHEREAS, the accolades continue to come in for The Chicago Diner, namely - Chicago Reader Best of Chicago - Reader's Choice Best Vegetarian 2012, 2011 and 2009; VegNews Magazine -Favorite Vegetarian Restaurant 2011, 2009 and 2005; 77.Cs Best Food Ever, Darn Good Diners 2010; WGN TV Chicago Best Vegetarian 2010 and the prestigious Miche/in Guide Chicago Recommended for 2013, 2012 and 2011; now therefore,
BE IT RESOLVED, that we the Mayor and Members of the Chicago City Council assembled this 8'" day of May, 2013, do hereby congratulate Michael Hornick and Jo Kaucher, as owners of The Chicago Diner on their 30lh Anniversary, wishing them continued success; and,
BE IT FURTHER RESOLVED, that a suitable copy of this resolution be prepared and presented to Michael Hornick and Jo Kaucher.
