RESOLUTION
Whereas, Ethiopian Diamond Restaurant is celebrating its 20 Anniversary with a reception and dinner on August 2, 2016; and
Whereas, Since its opening in Edgewater in 1996, Ethiopian Diamond and its chef-owner, Almaz Yigizaw, have distinguished themselves as true cultural ambassadors for Ethiopian cuisine in Chicago; and
Whereas, Ms. Yigizaw has served this community by showcasing Ethiopian musicians and visual artists and organizing numerous special events including holiday celebrations, anniversaries, baptisms, birthdays, graduations, and weddings; and
Whereas, The restaurant has attained remarkable growth over its 20 years, opening a second location in Rogers Park, expanding into off-site catering and producing its specialty injera bread for both local and nationwide delivery; and
Whereas, Ethiopian Diamond has received numerous awards and much recognition for its sustained dedication to the Edgewater and greater Chicago communities; and
Whereas, Ms. Yigizaw has provided longstanding, valuable, and tangible support of Ethiopian immigrants and refugees and their families. Now, therefore,
Be it resolved, That we, the Mayor and members of the City Council of the City of Chicago, gathered here this day of July 20,2016, do hereby express our gratitude to Almaz Yigizaw and congratulate her on the anniversary of Ethiopian Diamond Restaurant; and
Be it further resolved, that a suitable copy of this resolution be presented to Ms. Yigizaw.
