RESOLUTION


WHEREAS, John Coletta, a widely admired Chicago restaurateur and chef, will be honored with the Excellence in Business Award presented by the Italian American Chamber of Commerce on November 21, 2015; and

WHEREAS, The Chicago City Council has been informed of this event by Alderman Edward M. Burke; and

WHEREAS, The Italian American Chamber of Commerce is an association of professionals and businesses that seeks to promote friendly relations amongst its members and promote civic pride; and

WHEREAS, A first generation Italian-American, John Coletta serves as the Executive Chef and Managing Partner of Quartino Ristorante & Wine Bar on Chicago's Near North Side; and

WHEREAS, A native of New York, John Coletta is a classically-trained chef who grew up in a household where his parents ran a neighborhood restaurant; and

WHEREAS, Despite his wide range of training and exposure to many types of cuisine, John Coletta has dedicated his culinary career to keeping alive authentic Italian recipes; and

WHEREAS, Following his move to Chicago, John Coletta was the Executive Chef at Entre Nous and Primavera at the Fairmont Hotel and the acclaimed Caliterra Restaurant in Chicago's Streeterville neighborhood; and

WHEREAS, In 2004 John Coletta embarked on a partnership with Steve Lombardo and Larry Shane to bring his vision of a classic, urban-Italian ristorante to life; and

WHEREAS, John Coletta infused Quartino Ristorante & Wine Bar's seasonally driven menu with authentic regional preparations of rustic Italian recipes that date back 200 years; and

WHEREAS, Quartino Ristorante & Wine Bar opened its doors in 2005, and is now entering its ninth year of showcasing the flavors and traditions of Italy's most vibrant regions to Chicago diners; and

WHEREAS, Quartino was awarded the coveted Ospitalita Italiana by the Italian government which recognizes restaurants that uphold the traditions of Italian culture; and...
