RESOLUTION
WHEREAS, Chicago is a city rich in cultural diversity and ethnic cuisines, where many chefs and restaurateurs bravely create fusions of unlikely origins that highlight differences while harmonizing flavors and textures; and
WHEREAS, one excellent example of this art is Flo & Santos "Pizza and Pierogi," located at 1310 South Wabash in Chicago, which has that unlikely phrase appended to its name on the front of the retaurant; and
WHEREAS, the online magazine Chicagoist annually selects Chicago's top pizza emporiums, and the 2014 list includes Flo and Santos; and
WHEREAS, Flo and Santos was recently featured on WTTW's Emmy award-winning weekly restaurant review series Check, Please!, having been chosen as a panelist's favorite Chicago eatery; and
WHEREAS, the City Council has been informed of this achievement by Alderman Robert W. Fioretti ofthe 2nd Ward; and
WHEREAS, pizza offerings at Flo and Santos include classic Mediterranean flavors and seasonal surprises, but also such daring combinations as "Flo's Polish" (topped with house-made polska kielbasa, sauerkraut and apple wood-smoked bacon); "Buffalo Bill's Chicken" (with spicy buffalo sauce, roasted chicken breast, bleu cheese and green onions); and "Kai's Hawaiian" (with Canadian bacon, pineapple and onion); and
WHEREAS, the menu at Flo and Santos includes other crossover and fusion items, such as Buffalo style "pork wings," as well as Italian and Polish staples such as panzanella and pierogi; and
WHEREAS, its creative approach to pleasing the public palate has established Flo and Santos as an innovative, interesting and fun place to dine and drink; now, therefore,
BE IT RESOLVED that we, the Mayor and members of the City Council ofthe City of Chicago, assembled this 5th day of November, 2014, do hereby congratulate Flo & Santos Pizza and Pierogi on being selected one of Chicago's best pizza eateries for the year 2014, and we wish its owners and staff continued success; and
