RESOLUTION


WHEREAS, Jean-Claude Poilevey has gone to his eternal reward at the age of 71; and

WHEREAS, The Chicago City Council has been informed of his passing by Alderman Edward M. Burke; and

WHEREAS, Jean-Claude Poilevey was an iconic French chef and a champion of the Chicago expatriate community; and

WHEREAS, Born in the Burgundy region of France, Jean-Claude Poilevey began learning his trade as a youth and worked in a series of local restaurant kitchens; and

WHEREAS, By the mid-1960's, Jean-Claude Poilevey moved to London, England where worked at two of its most prominent restaurants, Cafe Royale and the Colony Club; and

WHEREAS, In 1968 Jean-Claude Poilevey was recruited, along with the late legendary Chef Jean Banchet, to open the Playboy Club & Resort in Lake Geneva, Wisconsin; and

WHEREAS, In 1973 Jean-Claude Poilevey relocated to the Chicago area to open La Fontaine Restaurant on Clark Street in Lincoln Park, which later changed its name to Jean Claude; and

WHEREAS, During the 1990s, Jean-Claude Poilevey established Le Bouchon in Bucktown and La Sardine on the Near West Side; and

WHEREAS, The hard work, talent and dedication of Jean-Claude Poilevey serve as an example to all; and

WHEREAS, His love of life and ability to live it to the fullest endeared Jean-Claude Poilevey to his family members, friends and all who knew him, and enabled him to enrich their lives in ways they will never forget; and

WHEREAS, Jean-Claude Poilevey was an individual of great integrity and accomplishment who will be dearly missed and fondly remembered by his many relatives, friends and admirers; and

WHEREAS, To his wife, Susanne, and his beloved family, Jean-Claude Poilevey imparts a legacy of faithfulness, service and dignity; now, therefore

BE IT RESOLVED, That we, the Mayor and the members of the Chicago City Council, assembled this thirteenth day of April, 2016, do hereby commemorate Jean-Claude Poilevey for his grace-filled life and do hereby express our condol...
